While Carter is a pretty good eater most of the time, his vegetable menu has been getting smaller & smaller. For Valentine's Day, Erin got me the Sneaky Chef book to try to work a few more veggies into C's diet. Without any manipulation he sporadically eats sweet potatoes, broccoli, avocados, & veggie burgers (do those even count?).
It works like this - you mash or food-process beans, cauliflower, peas, etc, & mix them in foods that can hide the "sneaky veggies". Two that I've tried so far are garbanzo & pinto beans in mac & cheese, & tonight's dish mashed potatoes w/cauliflower. I added some visible peas for extra credit.
I'm not sure if he ate all of it because I let him sit at the big kid's table or because he liked it, but I'll claim my "veggie victory" either way.

Way to got Carter! And Bill. I should check out that book. My kids...Elle especially...are the pickiest eaters alive!

Another good book with stuff like this is Deceptively Delicious, by Jessica Seinfeld. There's even a recipe for brownies with spinach in them!
