Now you're COOKING!

Our loyal readers may remember that my Schwangston Bowl 2009 victory meant that my lovely bride would expand her culinary talents beyond cereal and microwave popcorn. The deal was to cook one new meal each month and cook it again to practice. We got a late start in Jan., but I'm confident that she'll catch up this week.

The meal that Ms. Schwangston chose was pasta w/meatless soy substitute in an asparagus & green pepper marina sauce with sides of sliced apples and garlic bread. The meal was a success. We all woke up this morning with no ill-effects so, so far so good (the pic of C is one of toddler joy, not agony). Please pass along any suggestions for upcoming meals and remember: easy-to-make basics. We're just looking for a "go-to running play to get 3 yards" not "flea flickers, or wildcat formations" (pardon the football analogies). And I agree with Ms. Schwangston, that yes, meals DO taste better when someone else is cooking.

In related eating news, Carter has recently taken great interest in saying "the Amen" for meals. We started showing how to hold his hands, and thank God for his blessings. So far it goes something like this, "Thank you Mommy, Thank you Daddy, Thank you Carter, Thank you baby....AMEN!" We're working on Peace on Earth, but very proud of his progress nonetheless. He enjoys it so much that we may bless a meal several times.

Thanks for reading...

Hi Bill and Erin,
Just wanted to share a recipe that is super easy and vegetarian (if she can tolerate dairy). It is spinach stuffed shells. Let me know if you are interested. Oh and I can't believe what a big boy Carter is now.

Nice job, Schwie! Is it strictly coincidental that Carter is so excited about blessing the food at about the same moment that he see mom in the kitchen? Hmmm...
